Founded in 1998 by two French entrepreneurs, the brand began franchising in 2006, expanded into mass distribution in 2016, and ventured into retail in 2017. By the end of 2023, the brand had nearly 200 locations, primarily in France and internationally (including the United Kingdom, Belgium, Luxembourg, Switzerland, Spain, United Arab Emirates, and Saudi Arabia), with 45 units. Since late 2018, Sushi Shop has been part of the Amrest group, a major European catering company. All stores offer a wide range of Japanese and Californian-inspired sushi, including sushi, maki, California rolls, spring rolls, sashimi, and tartare. Known for its creativity and product innovation, the brand has collaborated with renowned chefs such as Cyril Lignac (2011), Jean-François Piège (2012), Thierry Marx (2013), Joël Robuchon (2014), Kei Kobayashi (2017), Anne-Sophie Pic (2018), Mauro Colagreco (2019), Grégory Marchand (2020), Paul Pairet (2021), Mory Sacko (2023), and Albert Adrià (2024). Sushi Shop has also showcased artistic creativity through partnerships with famous artists (Kenzo, Lenny Kravitz, Kate Moss, Craig & Karl, Monsieur Madame, Scott Campbell, Nasty Jayone, Ed Broner) and emerging designers, brands, or illustrators (Fernando Togni, Chris Labrooy, Tyrsa, Papermint, Maison Sarah Lavoine, Sturia, Jean André, Ba&sh, Tetris™, Mr Brainwash, Le chocolat des Français, Docteur Paper, Nanoblock™, The Blind, Smiley®, Stranger Things, Lili Scratchy, Pierre Brault, PAC-MAN, Florence Blanchard).
